Spicy Sausage With Green Chile Gravy
Ladies & Gentlemen...
I’m back...& just in time for your Sunday brunch...I’m giving you my version of Spicy Sausage & Green Chili Gravy...make it...pour it over some biscuits...serve it up with some eggs...and you got yourself breakfast...or brunch...or “brinner”. Our family is a big fan of breakfast for dinner...aka “brinner”.
Spicy Sausage With Green Chile Gravy
Whatcha’ Need
•1 pound of sausage
•1/4 teaspoon of red chili flakes
•2-4 tablespoons of diced roasted green chiles (if I’m feeling lazy I use canned green chiles-1⁄2 of a 4oz can for a milder version-the whole 4oz can for a lil more kick)
•1 teaspoon black pepper
•1/4 cup of flour
•1/2 cup whipping cream (I’ve used half/half too when I’ve been out of whipping cream)
•2 cups whole milk
What Ya’ Do
•Heat a non-stick skillet over medium heat
•Add the sausage & chili flakes...break up into small crumbles (side note-I day small because my Mother has drilled that into my head...she hates chunky ground beef...)
•Stir in green chiles and black pepper...cook for about another 2-3 minutes
•Turn the heat down a bit & sprinkle in the flour. Stir it all up...
•Pour in the cream (while you’re still stir’n...)
•Stir in 2 cups milk & turn down the heat...let it simmer for about 8-10 and then serve...
I’m not a big fan of adding salt...the PIC is...he adds salt to his liking...so taste it and do what you like.
This recipe is a combination of two recipes...one I found in a notebook of handwritten recipes I got at a yard sale and a recipe that was given to me by the one and only Penelope M...
Just an idea: If your lucky enough to have some of my Serrano Salsa available to use...try substituting the salsa in place of the green chilies.
